Raw Cookie Dough Brownie Bars

I have a version of a similar recipe from a few years back, but this one turned out so much better. This one is almost like a creamy fudge texture, rather then being so dense. Enjoy 🙂

Ingredients:

(brownie)

  • 2 cups ground almonds (almond flour)
  • 2/3 cup cocoa powder
  • 1 1/2 cup dates, soaked in hot water for 2-4 minutes
  • 1 tsp vanilla extract
  • 1/4 cup dairy-free chocolate chips (optional)

(cookie)

  • 1/3 cup coconut oil (or vegan butter)
  • 1/3 cup maple syrup (or coconut sugar)
  • 2/3 cup flour
  • 1 tsp vanilla extract
  • 1/4 cup dairy-free chocolate chips

Directions

  1. In a blender, add ground almonds, cocoa powder, drained dates, and vanilla. Blend until smooth. Water may need to be added to help incorporate. Add mixture to bowl and add chocolate chips and combine.
  2. Line a square brownie dish with parchment paper. Place brownie mixture in and press with spatula to cover the bottom. Place in fridge.
  3. In a bowl, add coconut oil and maple syrup and cream together. Add flour and vanilla extract and combine. Add chocolate chips.
  4. Place spoonfuls of cookie dough over brownie then press down with spatula.
  5. Place in freezer for 10 minutes before cutting. Cut into squares then store in freezer.
