When making my cheesecakes, I was left with a lot of leftover crust ingredients as I originally got the numbers wrong. On the plus side I came up with this recipe! They seem to be very popular lately and I’ve been wanting to make them but never found a recipe that was intriguing enough. This recipe is super easy and very delicious. It’s very high in protein and fibre as it as a large amount of almonds and walnuts. Try it out and let me know!!
Ingredients (makes about 20):
- 1/2 cup almonds, raw
- 1/2 cup walnuts, raw
- 1 cup packed dates
- 2 tbsp sweetened shredded coconut
- 1 tbsp maple syrup
- 1 tsp vanilla
- Warm water
Directions:
- In a food processor, blend all ingredients. If it isn’t combing together, add a little warm water teaspoon by teaspoon.
- Mixture should hold together when squeezed, if not add more dates.
- Roll into balls and place in freezer.
