Chili Bean Fajitas

Came home from school today and all I wanted were fajitas. I whipped up these delicious things in about 20 minutes. They’re easy, fast, and delicious. Not only that, but they’re healthy. These fajitas contain no meat cutting out saturated fat and cholesterol. They’re also packed full of vegetables like red pepper, red onion, avocado, and lettuce. There is nothing to complain about when making these fajitas. Enjoy!

Ingredients:

(makes 5 small fajitas)

  • 1 can white beans
  • 1 tsp olive oil
  • 1/2 red onion, sliced
  • 1/2 red pepper, sliced
  • 1 avocado, sliced
  • 1/2 cup chopped lettuce
  • handful of cilantro
  • 5 small corn tortillas
  • Sour cream

fajita seasoning:

  • 1 tbsp chili powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp oregano
  • 1/2 tsp paprika
  • 1 1/2 tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  1. Combine all seasoning ingredients into a bowl and set aside. In a  sautee pan, heat olive oil on medium heat. Add beans, red onion, and red pepper. Add seasoning and combine thoroughly. Cover and let cook for 5 minutes stirring occasionally.
  2. In another pan, heat tortillas on medium heat until slightly crispy.
  3. Once veggies are cooked, add to tortillas. Add chopped lettuce, avocado, and cilantro. Serve with a sour cream
